I love berries. Summer is ending and I will seriously miss the fresh local berries.
Here is my fresh strawberry pudding recipe as a goodbye to summer:
Serves: 2 Prep: 5 min (plus soaking time) Set time: overnight
Ingredients:
8-10 strawberries
3 tbsp cashew cream
5 dried apricots (soaked in hot water for 30min)
1/3 banana
1 tbsp chia (this is a greek yogurt texture, 2tbsp for a thick pudding texture)
Method:
Blend all in a good blender for the smoothest texture, refridgerate overnight and serve. Great with a granola topping
TIPS: The texture and flavour of this pudding will vary greatly with the strawberries you use. If your strawberries are a little bland, use less banana or the banana flavour will overpower. I have had to use as many as 12 berries to get the right flavour and colour. its a taste as you go kind of recipe 😉
The fruits here serve as natures natural sweetener but if it isnt sweet enough for you go ahead and add your favourite liquid sweetener!
You can eat this without letting it set, it should be fairly thick and the chia having been ground up isnt crunchy anymore but I still prefer letting the chia work its magic before eating 😉

This is what it looks like before it set, obviously its not the bright pink that all those fake strawberry things are but it is one of those things that tastes better than it looks!

Yes it is super easy. You soak 1 cup raw cashews overnight and then purée in blender with enough water (about 1/2-3/4 cup to reach cream consistency)
